West African suya is a classic street food snack from the region. This version has a unique twist with fragrant jerk rub on the meats and a delicious creamy peanut sauce. The marinade is the key to giving this suya a dynamic flavor, made with a combination of cayenne pepper, smoked paprika, garlic powder and onion powder. Grilling the suya on a charcoal grill or over hot coals will add an extra layer of smokiness to the dish.

Ingredients

  • 450g beef cubes
  • 1 tsp cayenne pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp oil
  • 2 cloves garlic (minced)
  • 2 cm ginger (minced)
  • 1/4 cup peanut butter
  • 2 tbsp honey
  • 60 ml water
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp sesame oil

Instructions

  1. 1

In a bowl, mix together the cayenne pepper, smoked paprika, garlic powder, and onion powder.

  2. 2

Season the beef cubes with the spice mixture and oil. Cover and let marinate for at least 30 minutes.

  3. 3

In a small saucepan, heat the garlic, ginger, peanut butter, honey, water, salt, and black pepper.

  4. 4

Heat a charcoal grill or hot coals, and place the beef cubes on the grill. Cook for 2-3 minutes per side or until cooked through.

  5. 5

In the meantime, heat the sesame oil in a skillet over medium-high heat and cook the sauce for 2-3 minutes until it thickens.

  6. 6

To serve, plate the grilled beef cubes and drizzle with the sauce.

Chef's Tip

For a special twist, you can brush the beef cubes with honey before grilling for an extra sweet flavor.
