Ingredients
- 1 kg beef (trimmed and cubed)
- 2 large potatoes (peeled and cubed)
- 1 green chili (seeded and diced)
- 1 bunch of mint (chopped)
- 2 tablespoons of oil
- Salt and pepper to taste

Heat the oil in a large pot or Dutch oven over medium-high heat. Add the beef and cook until lightly browned.

Add the potatoes, chili, and mint. Season with salt and pepper. Cover and cook, stirring occasionally, for 25 minutes or until the potatoes are tender.

Uncover and continue to cook until the sauce has reduced and the beef is chargrilled and browned.

Chef's Tip
For a smokier flavor, finish the dish off by placing it under the grill for a few minutes.

The word 'jollof' comes from the Wolof people of West Africa. They ate a dish of fried groundnuts and rice which is now known as jollof rice.
