Vegetarian Lomo Saltado is a delicious and vibrant dish from Ghana that combines the freshness of vegetables with the warm, boldly flavored marinade of tomatoes, onions, and spices. It’s great as a light, flavorful entrée or can be served as part of a larger meal. Ama’s version of this classic utilizes traditional ingredients like mushrooms and sweet potatoes, but is anything but ordinary.

Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 onion, diced
  • 2 tomatoes, diced
  • 1 tablespoon soy sauce
  • 1/2 teaspoon achiote powder
  • Salt and pepper to taste
  • 1/2 cup red wine
  • 1 teaspoon cumin
  • 1 cup mushrooms, quartered
  • 1 cup cauliflower florets
  • 1 cup sweet potato, cubed
  • 1/4 cup sliced green onions

Instructions

    Heat oil in a medium skillet over medium heat. Add garlic, onion, tomatoes, soy sauce, achiote powder, salt and pepper and cook for 5 minutes.

    Add red wine and cumin and cook for 2 minutes.

    Add mushrooms, cauliflower, and sweet potato and cook until vegetables are tender, about 10-12 minutes.

    Stir in green onions and cook for 1-2 minutes.

    Serve hot over rice.

Chef's Tip

For extra flavor, try adding a tablespoon of Worcestershire sauce or a sprinkle of paprika.
