Ingredients
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 onion, diced
- 2 tomatoes, diced
- 1 tablespoon soy sauce
- 1/2 teaspoon achiote powder
- Salt and pepper to taste
- 1/2 cup red wine
- 1 teaspoon cumin
- 1 cup mushrooms, quartered
- 1 cup cauliflower florets
- 1 cup sweet potato, cubed
- 1/4 cup sliced green onions
Instructions

Heat oil in a medium skillet over medium heat. Add garlic, onion, tomatoes, soy sauce, achiote powder, salt and pepper and cook for 5 minutes.

Add red wine and cumin and cook for 2 minutes.

Add mushrooms, cauliflower, and sweet potato and cook until vegetables are tender, about 10-12 minutes.

Stir in green onions and cook for 1-2 minutes.

Serve hot over rice.
Chef's Tip
For extra flavor, try adding a tablespoon of Worcestershire sauce or a sprinkle of paprika.
