Tomato Egg Wrap

Ingredients
- 2 large whole wheat tortillas
- 1 tablespoon olive oil
- 2 large eggs
- 1/2 onion, diced
- 1/4 teaspoon chili powder
- 1 cup cherry tomatoes, sliced
- Salt and pepper to taste
Instructions

Heat the olive oil in a medium-sized skillet over medium heat.

Beat the eggs in a small bowl. Add the beaten eggs to the skillet and cook, stirring occasionally, until the egg is scrambled. Add in the onions and chili powder, and continue to cook until the onions are tender.

Place the tortillas on a flat surface and top with the scrambled eggs and onions. Top with the tomatoes and season with salt and pepper.

Carefully fold the tortillas into wraps and serve hot.
Chef's Tip
To make this a heartier breakfast wrap, add some cooked diced potatoes or cooked pancetta.
