Taco-Filled Cannelloni

Ingredients
- 200g cannelloni pasta tubes
- 500g lean ground beef
- 1 cup black beans, rinsed and drained
- 1 onion, diced
- 3 cloves garlic, minced
- 2 teaspoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 2 cups shredded cheddar cheese
- 1 28 oz can diced tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon oregano,1 teaspoon dried basil
- 1/2 cup grated parmesan cheese

Preheat oven to 350°F (180°C).

Cook cannelloni tubes according to package instructions. Drain and set aside.

In a large skillet over medium heat, add the beef, black beans, onion, and garlic, and sauté for 5-7 minutes. Season with chili powder, cumin, paprika, salt, and pepper, to taste.

Stir in the olive oil and cook for an additional 5 minutes until the beef is cooked through.

Transfer the beef mixture to a large bowl and add the cheddar cheese, stirring until combined.

Grease a 9x13 inch baking dish with cooking spray and spread 1 cup of diced tomatoes in the dish.

Stuff each cannelloni tube with the beef and cheese mixture and place in the baking dish.

In a medium bowl, mix together the remaining diced tomatoes with the tomato paste, oregano, and basil. Pour the mixture over the cannelloni.

Sprinkle parmesan cheese on top.

Bake for 30 minutes, or until the cheese is melted and bubbly.
