Sweet Potato and Spinach Italian Casserole

Ingredients
- 600g sweet potatoes, peeled and thinly sliced
- 300g fresh spinach
- 1 tbsp olive oil
- 1 white onion, chopped
- 2 cloves garlic, minced
- 200ml vegetable stock
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- 1/2 tsp dried rosemary
- Salt and pepper to taste
- 100g grated mozzarella cheese
- 50g grated Parmesan cheese
Instructions

Preheat the oven to 190°C.

Sauté the chopped onion and minced garlic in olive oil until translucent.

Add the spinach to the pan and cook until wilted.

In a bowl, mix the basil, oregano, thyme, rosemary, salt, and pepper.

Layer half of the sliced sweet potatoes in a baking dish.

Spread half of the spinach and onion mixture over the potatoes.

Sprinkle half of the herb mix and half of the mozzarella cheese on top.

Repeat the layers with the remaining ingredients.

Pour vegetable stock over the casserole to allow the flavors to meld during cooking.

Top with grated Parmesan cheese and cover with foil.

Bake covered for 20 minutes, then remove the foil and bake for another 10 minutes or until the top is golden and bubbly.
