A breeze through a Nordic midsummer meadow—this mocktail catches that moment when sunlight turns blossoms to perfume and laughter floats above picnic blankets. Elderflower brings a honeyed, pear-like aroma, while lemon and mint make everything shimmer like dew on grass.

Scandi summer in a glass is no accident: elder trees have been cherished across Northern Europe for centuries, their blossoms transformed into cordial to toast long daylight and easy company. Here, we keep the bubbles bright, the citrus clean, and the mint fresh, so every sip feels like stepping into golden hour.

Think floral first, citrus second, sparkle always. A gentle bruise of mint unlocks cool herbal notes without turning the drink bitter, and the balance of cordial to lemon lets you glide from sweet to sprightly. It’s picnic-friendly, garden-party ready, and delightful at brunch—no spirits needed, just sunshine and clinking ice.

Ingredients

Keep everything well-chilled for maximum sparkle, and choose tender mint for a gentler, sweeter aroma.
  • 120 ml elderflower cordial (syrup)
  • 40 ml fresh lemon juice (about 1 small lemon)
  • 300 ml chilled sparkling water
  • 10–12 fresh mint leaves (plus 2 small sprigs for garnish)
  • 6–8 ice cubes
  • 2 lemon wheels or thin lemon peel ribbons (garnish)

    From fresh lemon juice

Instructions

Build directly in the glass to preserve bubbles and keep the drink lively.
  1. 1

Lightly clap the mint leaves between your palms to release aroma, then divide them between two chilled Collins glasses.

  2. 2

Add the lemon juice (20 ml per glass) and a splash of the elderflower cordial. Gently press the mint with a spoon—do not mash—to bruise lightly.

  3. 3

    Fill the glasses with ice.

  4. 4

Divide the remaining elderflower cordial between the glasses.

  5. 5

Top with chilled sparkling water (about 150 ml per glass).

  6. 6

Stir gently from the bottom to lift the mint without knocking out the bubbles.

  7. 7

Garnish with a mint sprig and a lemon wheel or peel ribbon.

  8. 8

Taste and adjust: add a squeeze more lemon for brightness or an extra dash of cordial for sweetness.

Chef's Tip

A tiny pinch of fine sea salt heightens the floral notes and makes the citrus pop—add it with the lemon juice.

Fun Fact

Elderflower cordial is a traditional summertime favorite in the UK and Scandinavia, often made during peak bloom to celebrate midsummer festivities.
