Ingredients
- 200g sushi rice
- 60ml rice vinegar
- 2 tbsp sugar
- 1 tsp salt
- 150g fresh shiitake mushrooms
- 2 tbsp soy sauce
- 1 tbsp mirin
- 4 nori sheets

Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions.

Combine the rice vinegar, sugar, and salt in a small bowl. Warm it slightly until the sugar dissolves. Gently fold this mixture into the cooked rice, then allow it to cool to room temperature.

Slice the shiitake mushrooms and sauté them in a pan over medium heat until they begin to soften.

Add soy sauce and mirin to the mushrooms, and cook until the liquid is absorbed and the mushrooms are fully coated.

Place a nori sheet on a bamboo sushi mat, and gently spread an even layer of the seasoned rice over the nori, leaving a small border at the top edge.

Arrange a line of the shiitake mushrooms along the bottom edge of the rice.
