Imagine a golden-hour aperitivo on a Venetian promenade—cool breeze, clink of glasses, and a glow that matches the drink in your hand. This spritz channels that easy Italian elegance while celebrating winter citrus: bright orange and jeweled pomegranate bringing sparkle to the season.

Rooted in Italy’s love for light, bubbly sips, this version leans into fresh juice for a juicy, ruby tint and a lively lift. The result is refreshment with personality—zesty, lightly sweet, gently tart—perfect for toasts, brunches, or a casual night that wants a little ceremony. A few pomegranate arils tumble through the bubbles like confetti, while orange oils perfume each sip for a subtle, sunny finish.

Ingredients

Chill everything well; cold ingredients keep the bubbles lively and the spritz crisp.
  • 600 ml chilled prosecco
  • 200 ml freshly squeezed orange juice (strained)
  • 120 ml pomegranate juice (unsweetened if possible)
  • 200 ml chilled soda water (or sparkling water)
  • 60 g pomegranate arils
  • 1 medium orange, cut into thin wheels, plus wide strips of peel for expressing oils
  • Ice cubes
  • Optional: 80 ml Aperol or 4–8 dashes orange bitters, to taste

Instructions

Build directly in large wine glasses for theater, or batch in a jug and finish with bubbles at the table.
  1. 1

Fill 4 large wine glasses with ice and drop in a spoonful of pomegranate arils.

  2. 2

Add 50 ml orange juice and 30 ml pomegranate juice to each glass. If using, add 20 ml Aperol or a couple of dashes of orange bitters.

  3. 3

Gently pour 150 ml prosecco into each glass, then top with about 50 ml soda water.

  4. 4

Express a strip of orange peel over each glass to release oils, then garnish with an orange wheel.

  5. 5

Give a brief, gentle stir to combine without knocking out the bubbles. Taste and adjust with a splash more soda for lighter, or a touch more juice for fruitier.

Chef's Tip

Freeze pomegranate arils in water as jewel-like ice cubes—keeps the drink cold without dilution and looks stunning.

Fun Fact

The word “spritz” comes from the German “spritzen,” meaning “to spray,” a nod to Austrian influence in the Veneto when wine was lightened with a splash of water.
