Ingredients
- 12 cannelloni pasta tubes
- 500 g ground beef
- 1 medium onion, finely chopped
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 150 g black beans, drained and rinsed
- 150 g corn, drained
- 2 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- Salt and pepper to taste
- 400 g tomato passata
- 1 tsp dried oregano
- 100 g grated cheddar cheese
- 100 g grated mozzarella cheese
- Fresh cilantro for garnish
- Olive oil for cooking
Instructions
- 1
Preheat your oven to 180°C (355°F).
- 2
In a pan over medium heat, add a dash of olive oil and sauté the onion until translucent. Add the garlic and continue to cook for about 1 minute.
- 3
Turn up the heat and add the ground beef to the pan, breaking it apart with a wooden spoon. Cook until browned.
- 4
Stir in the red bell pepper, black beans, and corn and sauté for another couple of minutes.
- 5
Season the beef mixture with ground cumin, smoked paprika, chili powder, salt, and pepper. Set aside to cool slightly.
- 6
Fill each cannelloni tube with the beef mixture and place them in a single layer in a baking dish.
- 7
Mix the tomato passata with the dried oregano and pour over the stuffed cannelloni.
- 8
Top with a blanket of cheddar and mozzarella cheese.
- 9
Bake in the preheated oven for about 25-30 minutes or until the cheese is bubbly and golden brown.
- 10
Garnish with fresh cilantro before serving.
Chef's Tip
For the best flavor, let the beef mixture sit for a few minutes after cooking before stuffing the cannelloni, allowing the spices to fully marry.
Fun Fact
While cannelloni is traditionally Italian, Mexicans have long embraced incorporating pasta into their cuisine, creating luscious fusion dishes such as this one.
