Isabelle's Spicy Chorizo Stew

Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 4 ounces chorizo, diced
- 1 jalapeño, seeded and diced
- 2 teaspoons smoked paprika
- 1 teaspoon cumin
- 2 teaspoons oregano
- 2 cups diced tomatoes
- 1 cup vegetable or chicken stock
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chopped cilantro
- 2 medium potatoes, cut into 1/2 inch cubes
Instructions

Heat the olive oil in a large pot over medium heat.

Add the onion, garlic, bell pepper, chorizo and jalapeño, and season with the smoked paprika, cumin and oregano.

Saute until the onion is translucent, about 5 minutes.

Pour in the diced tomatoes, stock, sugar, salt, and black pepper, and bring to a simmer.

Simmer for about 15 minutes, stirring occasionally, until the vegetables are tender.

Add the cilantro and potatoes and simmer for an additional 15 minutes or until the potatoes are cooked through.

Serve with a side of crusty bread to enjoy all the flavors.
