Ghanaian Suya Spice Stew
A classic West African stew, combining Ghanaian flavors and Nigerian suya spice, and served with jollof rice or boiled yams.

Ingredients
- 500g beef cubes
- 2 onions, finely chopped
- 2 garlic cloves, minced
- 200g tomato puree
- 2 tsp suya spice
- 2 tbsp vegetable oil
- 1 large red pepper, diced
- 1 large green pepper, diced
- 1 large red onion, diced
- 2 sweet potatoes, cubed
- 200ml beef stock
- Salt and pepper, to taste

In a large pot, heat the oil over medium-high heat. Add the beef cubes and cook until lightly browned.

Add the onions and garlic and cook until softened. Add the tomato puree and suya spice and stir to combine.

Add the diced red and green peppers, red onion, sweet potatoes, and beef stock. Bring the mixture to a boil, then reduce the heat and simmer for 30 minutes or until the beef is cooked through and the vegetables are tender.

Taste and adjust seasoning with salt and pepper, if necessary. Serve the stew with jollof rice or boiled yams.
Chef's Tip
For an extra smoky flavor, try using smoked paprika instead of regular paprika in the suya spice mix.

Suya spice is probably the most recognizable spice from West Africa. It is usually used to give a smoky and spicy flavor to grilled meats.
