Ingredients

  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1 jalapeno pepper, diced
  • 1 inch piece of fresh ginger, grated
  • 2 cups vegetable stock
  • 2 tablespoons tomato paste
  • 1 teaspoon cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 1 can of diced tomatoes
  • 1 can of kidney beans, drained and rinsed
  • 1 can of sweet corn, drained
  • 2 tablespoons fresh cilantro, chopped

Instructions

    Heat a large pot over medium-high heat. Add the onion, garlic, bell pepper, and jalapeno pepper. Cook until softened, about 5 minutes.

    Add the ginger, vegetable stock, tomato paste, cumin, coriander, smoked paprika, garlic powder, onion powder, turmeric, and chili powder. Simmer for 10 minutes.

    Add the diced tomatoes, kidney beans, and sweet corn. Simmer for 15 minutes.
