It takes about 30 minutes from start to finish and is perfect for both beginner and advanced home cooks. The best part? You can enjoy leftovers the next day, because the flavors get even better! To begin, fry a diced onion in vegetable oil until softened. Add finely chopped bell peppers, garlic, and chili pepper. Fry for about 3 minutes. Add diced potatoes to the pan and stir fry until they start to soften. Next, pour a generous amount of tomato puree into the pan. Add a cube of bouillon for extra flavor. For the twist, add a small spoonful of tomato paste and a bit of flavored-enhancing spices. Fill the pan with just enough water to cover the potatoes.
