Ingredients
- 1 onion, diced
- 2 bell peppers, chopped
- 2 cloves garlic, minced
- 1 chili pepper, diced
- 2 cups potatoes, diced
- 1/2 cup vegetable oil
- 1 can tomato puree
- 1 cubes bouillon cube
- 1 spoonful tomato paste
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin powder
- Salt and pepper to taste
- 2 cups cooked white rice
- 1/4 cup parsley, chopped

In a large pan, heat oil over medium heat and fry diced onion until softened.

Add bell peppers, garlic, and chili pepper and fry for about 3 minutes.

Add potatoes to the pan and stir fry until softened.

Pour tomato puree into the pan, followed by a cube of bouillon and a spoonful of tomato paste. Add chili and cumin powders and season with salt and pepper.

Fill the pan with enough water to cover the potatoes and let them cook for about 15 minutes or until potatoes are softened.

Arrange cooked white rice into the plate. Top with the flavorful potato jollof and sprinkle with finely chopped parsley.
