Ingredients
- 60 ml Pisco
- 30 ml fresh lime juice
- 20 ml simple syrup
- 30 ml fresh espresso
- 1 egg white
- A pinch of ground cinnamon for garnish
- Ice cubes

Begin by brewing a fresh shot of espresso and allow it to cool slightly.

In a shaker, combine the Pisco, lime juice, simple syrup, cooled espresso, and egg white.

Dry shake (shake without ice) vigorously for about 15 seconds to emulsify the egg white.

Add ice to the shaker and shake again until well chilled.

Strain the mixture into a chilled glass.

Gently sprinkle the ground cinnamon on top of the frothy egg white to garnish and serve immediately.
Chef's Tip
To achieve the perfect froth, shake the cocktail vigorously during the dry shake and don't skip the double shake with ice!
