Coconut Cream and White Wine Cod

Ingredients
- 1 kg cod, cut into pieces
- 200 ml white wine
- 200 ml coconut cream
- 2 red onions, diced
- 1 chili, diced
- 2 tablespoons chopped coriander
- 1 tablespoon olive oil
- Salt and pepper, to taste

1. Heat the olive oil in a large sauté pan over medium heat. Add the diced red onions and fry until golden, about 5 minutes.

2. Add the diced chili and fry for a further 2 minutes, then pour in the white wine and let it bubble away.

3. Add the cod pieces and stir until they are all coated in the sauce. Cook for 5 minutes, stirring occasionally.

4. Add the coconut cream and bring the mixture to the boil. Then reduce the heat and let it simmer for 10 minutes or until the cod is cooked through.

5. Season with salt and pepper to taste and sprinkle with the chopped coriander before serving.
Chef's Tip
If you want to add more heat to the dish, add some extra chili or a pinch of cayenne pepper.
