Classic Peruvian Ceviche

Ingredients
- 500g white fish fillets, diced.
- 2 tablespoons freshly squeezed lime juice.
- 2 tablespoons freshly squeezed lemon juice.
- 2 tablespoons freshly squeezed orange juice.
- 2 tablespoons olive oil.
- 1 teaspoon freshly ground sea salt.
- 1/2 teaspoon freshly ground black pepper.
- 1 avocado, diced.
- 1/4 red onion, diced.
- 1/2 cup chopped cilantro leaves.
- 1/4 cup chopped parsley.
Instructions

In a bowl, combine the diced fish, lime juice, lemon juice and orange juice. Mix well and set aside to marinate for 5 minutes.

In a separate bowl, combine the olive oil, sea salt, and black pepper. Stir until combined.

Stir the avocado, red onion, cilantro, and parsley into the fish mixture.

Add the olive oil mixture to the fish and vegetable mixture and mix until well combined.

Serve the ceviche in small bowls, garnished with a lime wedge.
Chef's Tip
Chop up some fresh jalapeno peppers and add them to the mixture for a spicy kick.
