Ingredients
- 2 lbs boneless, skinless chicken breasts
- 1 head cauliflower, cut into florets
- 2 large red bell peppers, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 carrot, diced
- 2 tablespoons olive oil
- 2 tablespoons Italian seasoning
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons chopped fresh parsley

Preheat the oven to 400 degrees Fahrenheit.

In a large bowl, combine the chicken breasts, cauliflower, bell peppers, onion, garlic, and carrots. Drizzle with the olive oil and then sprinkle the Italian seasoning, salt, and pepper evenly over the top.

Place the mixture into a large baking dish. Roast in the oven for 25-30 minutes, or until the chicken is cooked through and and the vegetables are fork tender.

Remove the dish from the oven and sprinkle the chopped parsley over the top. Serve warm. Enjoy!
