Crispy chickpeas—humble yet heroic—turn it into a more sustaining mid-day meal without feeling heavy.
Tip as you cook: lightly toasting the chili and tomato paste builds a “fond” that gives you restaurant-level flavour. Save some starchy pasta water to swirl in and create that silky, glossy sauce you dream about.
Ingredients
- 180 g dried short pasta (rigatoni or penne)
- 1 x 400 g can chickpeas, drained and rinsed (about 240 g drained weight)
- 200 g cherry tomatoes
- 1 small onion (about 80 g), finely chopped
- 2 cloves garlic (about 8 g), thinly sliced
- 15 g Calabrian chili paste (or crushed Calabrian chilies in oil)
- 6 g tomato paste
- 30 ml extra-virgin olive oil
- 1 g smoked paprika (optional)
- Zest of 1/2 lemon and 15 ml lemon juice
- 30 g Parmesan or Pecorino Romano, finely grated
- 10 g fresh flat-leaf parsley, chopped
- Fine sea salt, to taste
- Freshly ground black pepper, to taste
- 100–150 ml reserved pasta cooking water
- 10 g capers, drained (optional)

Bring a large pot of well-salted water to a boil. Cook the pasta until just al dente; reserve 150 ml of the cooking water and drain.

Meanwhile, pat the chickpeas dry. Heat 15 ml olive oil in a large non-stick pan over medium-high heat. Add chickpeas, a pinch of salt, and the smoked paprika (if using). Cook 6–8 minutes, shaking occasionally, until golden and crisp. Transfer to a bowl.

In the same pan, reduce heat to medium and add the remaining 15 ml olive oil. Soften the onion with a pinch of salt for 3–4 minutes. Add garlic and cook 30 seconds until fragrant.

Stir in the tomato paste and Calabrian chili paste; cook 45–60 seconds to toast. Add cherry tomatoes, a small splash of pasta water, and a pinch of salt. Cook 5–6 minutes until the tomatoes burst; gently mash a few to release juices.

Return the chickpeas to the pan with lemon zest and capers (if using). Add 50–80 ml pasta water and simmer 1 minute. Season with salt and pepper to taste.

Add the drained pasta and toss vigorously, sprinkling in half the cheese and some more pasta water as needed to create a glossy, clinging sauce.

Finish with lemon juice, most of the parsley, and a final toss. Taste and adjust heat (more chili paste) and brightness (more lemon) as you like.

Serve immediately, topped with remaining cheese, parsley, and a drizzle of olive oil.
Chef's Tip
For deeper umami, melt 1 anchovy fillet into the oil with the onion— it disappears into the sauce. Keep it vegetarian by skipping the anchovy and using a vegetarian hard cheese.
