This handmade gnocchi dish is an Italian classic with a twist. The gnocchi are cooked until lightly browned and then tossed in a luxurious brown butter sauce, pesto sauce, and walnuts. Ingredients

  • 600g of ricotta
  • 400g of all-purpose flour
  • 200g of walnuts, toasted and roughly chopped
  • 1 egg, lightly beaten
  • 1 teaspoon of nutmeg
  • 1 teaspoon of salt
  • 120g of butter
  • 3 tablespoons of parsley, finely chopped
  • 3 tablespoons of sage, finely chopped
  • 3 tablespoons of Parmesan cheese, grated

Instructions

    In a large bowl whisk together the Ricotta, egg, nutmeg, and salt until combined

    Gradually add the flour while mixing with a wooden spoon. When the dough starts to form and no longer sticks to the sides, turn it out onto a floured surface and knead for 3 minutes.

    Form the gnocchi into small golf balls and press each one lightly with a fork. Place the gnocchi onto a baking sheet lined with parchment paper and refrigerate for 30 minutes.

    In a large skillet, heat the butter over medium heat. When the butter starts to brown, add the parsley, sage, and walnuts. Fry for 1 minute and then add the gnocchi. Cook the gnocchi until they just begin to turn brown. Transfer the cooked gnocchi to a bowl and season with salt to taste.
