Beetroot & Feta Risotto
This Italian dish is a combination of beetroot, feta and risotto that makes a simple yet delicious meal.

Ingredients
- 2 large beetroots, peeled and cut into cubes
- 125g feta, crumbled
- 2 tbsp of olive oil
- 1 onion, finely chopped
- 1 garlic clove, finely chopped
- 300g risotto rice e.g. Arborio
- 100ml white wine
- 1 litre chicken or vegetable stock, hot
- 50g parmesan cheese, grated
- A good pinch of freshly ground black pepper
- A good handful of fresh chopped parsley
Instructions

In a large pan, heat the olive oil over a low to medium heat. Add the onion and garlic clove and cook for 5 minutes, stirring occasionally.

Add the risotto rice and stir to coat and cook for a further 2 minutes.

Pour in the white wine and mix until it is fully absorbed.

Turn up the heat to medium and start adding the hot stock, one ladleful at a time.

Once the liquid is absorbed, add the next ladle of stock.

Repeat this process until all the stock is used and the rice is cooked.

Stir in the beetroot and feta, mix until it is all combined.

Season with black pepper, add the parmesan cheese, the freshly chopped parsley and mix it all together.

Turn off the heat, cover the pan with a lid and let it rest for 5 minutes.

Serve the Beetroot & Feta Risotto!
Chef's Tip
To ensure the dish has a creamy texture, cook the risotto gently over a medium to low heat. This will help prevent it from sticking to the bottom of the pan.
