Ama's Coriander Beef Stew

Ingredients
- 2 tablespoons vegetable oil
- 500g beef, cubed
- 2 onions, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons grated fresh ginger
- 2 teaspoons ground coriander
- 1 teaspoon ground cumin
- 2 tablespoons tomato paste
- 2 potatoes, cubed
- 2 carrots, cubed
- 2 cups beef broth
- 2 tablespoons freshly chopped coriander
Instructions

Heat the oil in a large pot over medium heat.

Add the cubed beef and cook until browned, about 5 minutes.

Add the onions, garlic, ginger, coriander, and cumin and cook until fragrant, about 3 minutes.

Add the tomato paste and cook for a few minutes.

Add the potatoes and carrots and cook for 5 minutes.

Pour in the beef broth and bring to a simmer.

Simmer for 30 minutes or until the beef and vegetables are tender.

Stir in the freshly chopped coriander and season with salt and pepper to taste.

Garnish with fresh parsley or cilantro for a pop of color.
